It may be Michigan's salad bowl, but Hudsonville hasn't had a farm to table restaurant...until now.
Sonder Eatery opened in Terra Square not long ago. The goal of owner and executive chef Nick Rusticus is to focus on crafting comfortable food with some of West Michigan's best local products.
Rusticus grew up in Hudsonville, just a short distance from his new restaurant. He moved to Arizona and began his culinary career there."I had seen online that the city of Hudsonville was putting up this beautiful property Terra Square," said Rusticus. "I had no idea where in Hudsonville the property was but I loved the idea and I loved the concept and I wanted to be a part of it."Nick's proposal for Sonder Eatery was accepted. Hardly a year later, he's running his own restaurant in his home town.
Being a local, Nick knows the variety of products Michigan has to offer. "When we say locally inspired, we're utilizing as much local product as we possibly can. So really playing with what we were comfortable growing up with and what's approachable."Locals are thrilled to have a restaurant like this in Hudsonville with a thoughtful ingredient list showcasing local fare.The restaurant is currently working on obtaining a liquor license for the holiday season.
