GRAND RAPIDS, MICH. - Need a little inspiration for a delicious summertime spread?

Vault Catering and Blandford Nature Center stopped by My West Michigan to share some great recipes to try at home!

Summer Corn Panzanella w/ Peach-White Balsamic Vinaigrette

  • ½ cup corn, roasted and cleaned from cob
  • ½ cup tomato, diced
  • ½ cup cucumber, diced
  • ½ cup artichokes, drained
  • ¼ cup red onion, julienne
  • 2 cup sourdough bread, diced and toasted
  • 5 each roasted garlic cloves
  • 1/8 cup basil, chiffonade
Vinaigrette
  • 1 each ripe peach, roughly chopped
  • 1 cup white balsamic
  • 3 T Dijon mustard
  • 3 cloves Garlic
  • 3 sprigs thyme, stripped
  • ¼ cup sugar
  • 2 cup extra virgin olive oil
  • salt and pepper

Chicken w/ Thai Peanut Noodle Salad

  • 1 chicken breast, cooked and sliced
  • 2 cups rice noodles, cooked
  • ¼ cup toasted peanuts
  • ½ cup mixed bell pepper, julienne
  • ½ cup cucumber, diced
  • ¼ cup cilantro
  • ¼ cup scallions

Peanut Sauce

  • 1 cup peanut butter
  • 1/8 cup Sriracha
  • 2 T rice vinegar
  • 3 cloves garlic, minced 
  • 1 T ginger, minced
  • 3 T fish sauce
  • 2 T lime juice
  • 2 T soy sauce
  • salt and pepper
