National Nutrition Month: Focus on Seniors

Exchange: First and Main - Healthy Eating

March is National Nutrition Month. The theme for 20-16 is "Savor the Flavor of Eating Right" which encourages everyone to take time to enjoy food traditions and appreciate the great flavors and social experiences food can add to our lives.  This is especially important for seniors.  First & Main is a newer Assisted Living & Memory Care Community in Metro Health Village and we were joined by Food & Beverage Director Rick Hall, and Community Relations Director Teri Beatty.  You may learn more about First & Main at .  And for the recipes prepared on My West Michigan, check these out: 


Watermelon-Cranberry Agua Fresca - Serves 6

2 ½ pound seedless watermelon rind removed

1 cup fruit-sweetened cranberry Juice

¼ cup fresh lime juice

6 lime slices for garnish



                      Place melon in a blender or food processor

                      Process until smooth

                      Strain through fine mesh sieve

                      Pour juice into a pitcher

                      Add cranberry and lime juice, Stir

                      Refrigerate until chilled

                      Pour in chilled Glass

                      Garnish with lime slice







Pan Seared Salmon with Fresh Pineapple Salsa - Serves 6

                     1 cup fresh Diced pineapple

                     2 Tablespoons Diced Red onion

                     2 Tablespoon Chopped Cilantro

                     1/8 teaspoon Ground Red Pepper

                     1 Tablespoon Rice Vinegar

                     4- 6 ounce Fresh Salmon Fillets ½ inch thick

                       ½ teaspoon Salt / Preparation

                     Combine first 5 ingredients in a Bowl set aside

                            Can be made 1 Day Ahead


                      Heat a nonstick pan coated with cooking Spray       

                       Over medium-high heat

                      Sprinkle fish with salt

                      Cook 4 minutes on each side until it flakes with a fork

                      Top with Salsa

                     Serve with a ½ cup whole grain rice
