Mini Edible Snowmen
(Popcorn Balls)

Ingredients:
20 cups (5 quarts) plain popped popcorn
¾ cup light corn syrup
¼ cup butter
2 ½ (heaping) cups confectioners sugar
1 cup marshmallows
1 teaspoon iodized salt
2 teaspoons vanilla

Directions:
In a small saucepan over medium heat, combine the corn syrup, butter, sugar, marshmallows, salt and vanilla. Heat and stir until mixture comes to a low boil. Remove from heat and allow mixture to cool slightly while stirring. Carefully combine the hot mixture with the popcorn, coating each kernel.

Spray clean hands with butter-flavored cooking spray and quickly shape the coated popcorn into balls before the syrup cools entirely. Make small, medium and large sized popcorn balls and stack with the large balls at the bottom, medium in the middle and the smallest popcorn balls on top to look like a mini version of a snowman.

Decorate: Use white frosting to adhere candy decorations to the popcorn balls. Consider trying Rolo candies (top hat), licorice strings (scarf), pretzel sticks (stick arms), m&m candies (eyes and buttons), gum drops (can be shaped to make a carrot-type nose), candy corn (can be used as a nose) or any candy you want to try.
