Mango Gazpacho - Steve Brechting - Food Design
2 cups diced fresh magoes
2 cups orange juice
2 tablespoons olive oil
1 seedless cucumber, diced
1 small white onion, diced
2 garlic cloves, minced
1 jalapeno, seeded and minced
3 tablespoons fresh lime juice
2 tablespoons fresh dill
lemon twist for garnish
Combine mangoes, orange juice and olive oil in food processor, puree.
Add remaining ingredients to food processor and pulse until smooth consistency.
Refrigerate until ready to serve.
