The Cheshire Reuben

Recipe by: The Cheshire Grill
This will make four great, hearty sandwiches.

Eight slices of your favorite rye bread or pumpernickel-we use sun dried tomato swirl rye
Butter for grilling bread (Real butter, please)
8 slices of Swiss cheese
1 pound of lean, smoky thin sliced turkey breast
2 cups of red raspberry coleslaw

Dressing:
1/2 cup of your favorite raspberry vinaigrette
1/3 cup mayonnaise
1 TBSP white sugar
1 TBSP apple cider vinegar
1 1/2 tsp yellow mustard
1 1/2 tsp raspberry reduction

Slaw:
1/4 small head of red cabbage-shredded finely
2 radishes-sliced paper thin
1 shredded carrot

Make dressing in a separate bowl and then toss with vegetables to create this fantastic cole slaw.

Butter and grill the rye bread with the Swiss cheese, one slice on each side of the bread. Grill the turkey lightly to warm through the meat. Place four ounces of turkey and 1/2 cup of slaw on top of four of the slices of grilled bread and top with remaining four slices. Cut in half and serve with a dill pickle spear and your favorite French fries. Amazing and healthy!

This slaw is also amazing on a BBQ pulled pork sandwich or with BBQ chicken.
