2012 Grandwich entry - Skywalk Deli
(SKYWALK DELI) - After last years Grandwich competition we have been wracking or brains to make our "Grand Rapids Melting Pot" even better. Our belief is that what makes our city special are not just great local products, but the amazing array of people and cultures that make up Grand Rapids. Our answer came while attending the Three Fires Pow Wow at Riverside Park. While munching on some delicious fry bread we decided that such a classic local favorite would be the base. But where to go from there? On a road trip of course!

We toured the city from top to bottom, letting inspiration (and our stomachs) lead us. Our first thought was the awesome Kielbasa made by Lewendoski's meats. On our way there we passed several supermercados and taquerias, and decided that the creamy goodness of Queso Fresco would be a perfect addition. Unable to easily find any that was made locally, we made our own, using fresh milk from area dairies. Cruising South down Division, we tried to think of a way to represent the large and diverse Asian population. After stopping at several markets, the idea of a Sweet Chili Slaw was born, so it was off to the Fulton Street farmers market. While browsing the dazzling display of fresh local produce, we came across an old friend, and last year's secret weapon: the Mighty Sweet Potato! Yep, that's going in the mix. After strolling around in the sun, refreshment was in order, so we stopped in to one of our favorite local breweries. The Beer City Pale Ale seemed like the perfect complement to the already flavorful Kielbasa.
By now we where pretty happy, but one thing seemed to be missing. What could it be? Suddenly a light went off. Everything is better with Ada's own Mrs. Dog's disappearing mustard!
So now you know the story. The only thing left to do is try our sandwich, the "G.R.M.P. II." We'll see you at the Skywalk!
