AUNT GRACE'S PEACH PIE

1-9 inch Pie Crust

Cream Filling
2 ½ cups of whole milk
½ cup half and half cream
1 1/8 cups of sugar
1/3 cup scant of cornstarch
1 Tablespoon of butter
4 egg yolks
¼ teaspoon of almond extract
¼ teaspoon of vanilla extract

Mix milk, cream, egg yolks, sugar, sifted cornstarch in medium pan. Cook on medium heat, stirring constantly until thick. Add butter, vanilla and almond extracts.

Pour filling into pre-baked pie crust, chill until cold and top with fresh peach topping.

Fresh Peach Glaze -Topping
1 ½ cups of fresh, sliced peaches mashed
1 cup of sugar
1 cup of water
¼ cup of cornstarch
orange zest
dash of almond extract

Mix all of above ingredients in medium pan on thick. Chill until cold. Add four cups of fresh, sliced peaches to glaze, stir and coat completely. Top pie high with peach topping. Refrigerate until ready to eat.
