GRAND RAPIDS, MICH. - Campfires and summertime seem to go hand in hand, and often those campfires involve eating!
WZZM 13 Health Reporter Valerie Lego talks with Blue Cross Blue Shield of Michigan dietician Grace DeRocha about why apples are so good for you and has a tasty treat for your next campfire.
Campfire Baked Apples
- 4 large apples, pick your favorite
- 2 Tbsp. lemon juice, divided
- 1/3 cup dried fruit of choice, chopped
- 2 Tbsp. walnuts, chopped or your favorite nuts
- 1/4 tsp cinnamon, ground
- 1/8 tsp nutmeg, ground
- 1 Tbsp. butter, unsalted, softened, divided
- Using a knife of an apple corer carefully core the apples. Do not break open the apples.
- Brush the inside of the apples with half of the lemon juice.
- Place each apple on their own a 10-inch square sheet of aluminum foil.
- In a small bowl, mix the remaining lemon juice, dried fruit, nuts, cinnamon, nutmeg and half of the butter.
- Press dried fruit mixture into the center of each cored apple.
- Cut the 1/2 TBS butter into four equal parts.
- Place one piece of butter on top of each apple, over the center filled with the dried fruit mixture.
- Wrap each apple tightly with aluminum foil.
- Place aluminum foil wrapped apples in or next to hot coals or fire, but not onto open flame, and cook for 30 minutes - 1 hour. Keep checking your apples. If coals are too hot, remove from coals and place on a grate over the coals. Apples are done when they feel tender when squeezed. Serve warm. Enjoy with frozen vanilla yogurt.
