February is Heart Month and a great time to try some new and creative recipes that even a doctor will approve! Interventional Cardiologist Barbara Karenko is in the kitchen with Metro Health's Executive Chef Ryan and they are cooking up delicious and nutritious dishes for you to sample!

Crisp Tomatoes and Cucumbers

Ingredients:

3 ¼ Tbsp. Cider Vinegar

¾ tsp. Granulated Sugar

3/8 tsp. Salt

¼ tsp. Ground Black Pepper

1/3 tsp. Fresh Dill

1 5/8 Tbsp. Vegetable Oil

2 oz. Fresh Cucumber (sliced thin)

1 ½ oz. Yellow Onions (sliced thin)

5 5/8 oz. Medium Fresh Tomato (diced)

Thoroughly combine all ingredients but the vegetables. Add vegetables to the dressing. Toss, and let stand for at least 15 minutes before serving.

Tabbouleh

Ingredients:

4 ¼ oz. Bulgur Wheat

1 Medium Tomato (diced)

1 1/8 cup Fresh Cucumber (peeled and chopped)

½ cup Green/Spring Onions (bias cut)

1 1/8 Tbsp. Fresh Ground Garlic

5/8 cup Fresh Parsley

3 ¼ Tbsp. Fresh Mint (chopped fine)

1/3 cup Fresh Lemon Joice

¼ cup Olive Oil

Place Bulgur wheat into a bowl with 2 cups of boiling water. Soak for 30 minutes. Drain and squeeze out excess water. In a large mixing bowl, combine the Bulgur wheat and remaining ingredients. Toss and refrigerate for 4 hours.

Saxton Souvlaki

Chicken:

1 lb. Chicken Tenders or Chicken Breast

2 Tbsp. Cooking Oil

1 Tbsp. Allspice

2 tsp. Garlic Powder

1/2 tsp. Salt

1/2 tsp. Onion Powder (optional)

1/2 tsp. Cumin (optional)

1/2 tsp. Curry Powder (optional)

1/2 tsp. Oregano (optional)

1/2 tsp. Chili Powder (optional)

1/2 tsp. Tumeric (optional)

Sauce:

1 Cucumber

1/2 Cup Yogurt

1 Tbsp. Oregano

Either whole wheat pitas or whole wheat tortillas

1) Shred cucumber and spread out the sticks between a few layers of paper towel, making sure to sop up as much excess moisture as possible. Replace paper towels if necessary. Set aside.

2) Cut up chicken into 1-2" pieces, blot dry, and place into a bowl

3) Mix spices and add to the bowl of chicken. Toss until each piece is well coated.

4) Heat up the canola oil and saute the chicken until each piece is cooked throughout (approx 10 minutes)

5) Mix together shredded cucumber with yogurt and oregano.

6) Place chicken and sauce in pita/tortilla and enjoy! (For an added treat, if using tortillas, saute each one in a little oil, about 15 seconds per side)
