Take Five Gala Apple Tart - 11/18/2011

Yields 4 Tarts

ALMOND FILLING
8 oz Almond Paste
4 oz Soft Butter
2 Eggs
2 teaspoons All Purpose Flour
½ teaspoon Vanilla Extract

1) Soften the almond paste using the paddle attachment on a mixer.
2) Add the butter in pieces.
3) Add the eggs 1 at a time, scraping the bowl between additions.
4) Add the flour & vanilla.

ASSEMBLY
1 - 2 boxes of Puff Pastry (depending on the size of your plate)
2 Gala Apples (Gala apples do not contain a lot of juice so your puff pastry will not get soggy)
4 oz Melted Butter
½ cup Sugar
Pinch of Cinnamon
Vanilla Ice Cream

1) Allow puff pastry to thaw in the refrigerator overnight.
2) Place on a cutting board and invert a small to medium sized plate on top.
3) Using the plate as a guide, cut a circle with a paring knife.
4) Place the circles of puff pastry onto baking sheets.
5) Poke the puff pastry multiple times with a fork to allow it to rise evenly.
6) Use a small spatula to spread the Almond Filling onto the puff pastry.
7) Peel, core and thinly slice 2 Gala Apples.
8) Arrange the apple slices in a circle on top of the Almond Filling.
9) Brush the apples with melted butter.
10) Generously sprinkle sugar on top and then add a pinch of cinnamon.
11) Bake at 375°F for 25 - 30 minutes until golden brown.
12) Serve warm topped with your favorite vanilla ice cream.
