KAL'S STRAWBERRY SHORTCAKE
6-8 Biscuits-I use Bisquick & recipe for shortcake
2-3 qts Strawberries
Sugar
Vanilla Ice Cream
Cool Whip or Whipped Cream
Blueberries
Wash & cut the stems off the strawberries. I put at least half of the berries in a large bowl, add some sugar and mash with a potato masher. Let these sit for at least an hour before serving. Slice most of the remaining strawberries. Keep a few out to top the shortcake.
When it is time to assemble the shortcake, fold the sliced strawberries into the mashed strawberries.
First split a biscuit, put the bottom half in a bowl and spoon on some strawberries; then put a scoop of ice cream on top of the berries, top this with the other half of the biscuit, more berries, then the cool whip or whipped cream and top with a big berry and some blueberries for taste and color, and enjoy!
