Red Chicken Curry Boxty
Coconut Red Curry sauce
4 c Cocoa nut milk
½ c Red curry paste
8 c Chicken stock
½ c Garlic chopped
½ Shallot chopped
1 c Basil chopped
2 c White wine
1 tblsp. Cinnamon
1 c Cilantro
1 cup lime juice
Method: sauté garlic and shallots, cook white wine. And remainder of ingredients, ber mix and thicken with roux
Filling
1 cup Small cubed or chopped chicken
¼ cup snow pea's
¼ cup cubed onion
½ cup cubed tri colored bell peppers
3 quartered baby bella mushrooms
BOXTY MIX
1.1/ qt mashed
1 ½ qt shredded potato
1 qt water
1 qt milk
16 2 qt flour
1 qt diced red onion
1 qt diced red peppers
½ julienned scallions
Sweet veg except scallions, mix all remaining ingredients
Cook thin layered boxty on flat top or in pan, saute chicken and veg, stuff boxty, sauce inside, fold and plate, sauce the top and serve
