Take Five Zuccotto - 10/23/2012

Zuccotto (zoo-coh-toh)

Plastic Wrap
Medium sized bowl
1 loaf vanilla pound cake
1/4 cup of your favorite liquor
2 cups whipped cream
1 cup mascarpone cream
1/2 teaspoon almond or vanilla extract
1/4 cup powdered sugar
unsweetened cocoa powder

Spray your bowl with cooking spray then line it with plastic wrap
Cut the pound cake into 1/3 inch slices, then cut diagonally in half creating 2 triangles.
Line the bowl with the triangles and then brush them with your liquor.
Save the extra slices of pound cake for later.
Whip the cream, powdered sugar, almond or vanilla extract and the mascarpone cheese until you have firm peaks.
Take half of the cream and leave it vanilla - the other half add the cocoa powder.
Put the chocolate cream mixture in the bowl first.
Add the vanilla cream next so you will have 2 different layers of cream when you cut into it.
Once all the cream is in - put the remaining pound cake on the top and brush it with your liquor.
Cover and refrigerate for at least 3 hours.
Invert the cake onto a platter and sprinkle with powdered sugar and cocoa powder and serve!
