Sweet -Sour Red Cabbage
1/2 cup Cider Vinegar
1/4 Cup White Sugar
1/4 cup Brown Sugar (packed)
1 medium Red Cabbage (chopped, about 10 cups)
2 - 4 strips Bacon, diced
1 medium Apple (tart) peeled & chopped (I use any kind)
1/2 cup Onion, chopped
1/4 cup Water
2 tablespoons White Wine Vinegar or additional Cider Vinegar
1/2 teaspoon Salt
1/4 teaspoon Pepper
1/8 teaspoon Ground Cloves
In a large bowl, stir the cider vinegar and sugars until sugars are dissolved. Pour over the chopped cabbage, toss and set aside. In a large skillet over medium heat, cook bacon until crisp. Remove bacon with a slotted spoon and keep the drippings in the pan for the apple & onion.
Saute the chopped apples and onion till tender. Add the water and cabbage mixture and bring to a boil. Reduce the heat, cover and simmer for about 30-35 minutes. Stir in the remaining ingredients (except the bacon). Simmer uncovered for 5 minutes or until cabbage is tender. Sprinkle with reserved bacon just before serving. Makes 8-10 servings.
