French bread cut in 1/3 inch slices
Haloumi cheese cut in ¼ inch slices
Fresh basil leaves
Seedless watermelon cut in slices appropriate size for bread
2 medium yellow onions
Regional oil for frying
2 tbl Violet Balsamic Vinegar
Cut onions into slices and caramelize in a sauté pan with a small amount of oil. Keep the heat no higher than medium and stir often enough to prevent burning. When onions are soft and sweet, remove from heat and let cool. Add the balsamic and mix evenly. Heat a small amount of oil and brown one side of bread and set aside. Place Haloumi in the pan and brown on both sides (about 2 minutes a side maximum). Place cheese on bread, top with basil leaf, then watermelon and finally the onions.
