Sandhill Café Chicken Parmesan:
Ingredients:
1-6oz chicken breast
2 tablespoons grated Romano Cheese
2 oz seasoned bread crumbs
4 oz marinara sauce
2 slices provolone cheese
5 oz cooked spaghetti
1 teaspoon fresh parsley
Directions:
- Cover 6oz chicken breast with plastic wrap and pound until thin
- Remove plastic wrap and cover chicken breast with bread crumbs, forming a slightly thick crust
- Place breaded chicken breast into a pre-heated skillet with butter
- Sautee chicken breast until it is golden brown on both sides
- Pull skillet from heat, drain oil and top breaded, sautéed chicken breast with marinara sauce, Romano cheese and sliced provolone
- Place chicken breast on top of cooked spaghetti
- Sprinkle chopped parsley on top of dish
