(WZZM) - Chef Kevin Dewey of the Hudsonville Grille stopped by the WZZM 13 studio with his recipe for Herb Roasted Pork Loin and his "Tipsy Casper" cocktail. The recipes are as follows:

Herb Roasted Pork Loin:

  • Pork loin
  • Fresh garlic
  • Fresh basil
  • Fresh oregano
  • Fresh chopped rosemary
  • Extra virgin olive oil
  • Salt and pepper

  1. Place loin on cutting board and score the top
  2. Rub garlic, olive oil, fresh herbs, and salt and pepper onto the loin
  3. Wrap and refrigerate overnight
  4. When ready, pre-heat oven to 350 degrees. Roast for 1 hour or until loin's temperature reaches 160 degrees
  5. Pull out and let rest for 10 minutes to allow juices to reabsorb

Cherry Chutney:

  • 3 cups cranberry juice
  • 3/4 cups dried Michigan cherries
  • 1 1/2 teaspoons ground cinnamon
  • 1 sprig fresh rosemary
  • 1/3 cup brown sugar
  • salt and pepper to taste
  • corn starch as needed

  1. In a sauce pan, warm cranberry juice and cherries
  2. Add cinnamon, rosemary, brown sugar, salt and pepper
  3. bring to a boil, then reduce to simmer until fruit is reconstituted
  4. Make slurry with corn starch, bring sauce to a boil. Thicken with corn starch as needed
  5. Remove rosemary sprig
  6. Ladle over pork loin

Tipsy Casper Cocktail:

  • 6 oz. Vanilla ice cream
  • 1 oz. Grey Goose vodka
  • 1 oz. Kahlua
  • 1 Oreo cookie
  • 2 candy corn

  1. Add vanilla ice cream, vodka, and Kahlua to blender and blend
  2. Pour into drink glass
  3. Garnish with cookie to make a mouth
  4. Garnish with candy to make eyes
  5. Enjoy!
