Sweet Potato Pie
1 package refrigerated pie crust (you will need just one crust)
Pinch of salt
2 cups sweet potato puree
1 ½ cups heavy cream
¼ cup sugar
¾ cup brown sugar
1 tsp cinnamon
1 tsp ginger
¼ tsp orange zest
2-3 tbsp real butter to grease pie pan
Preheat oven to 375 degrees.
For the filling: Using a large bowl and whisk, beat the eggs with the salt
Add the next 7 ingredients and whisk thoroughly
Grease pie pan with butter
Lay one pie crust in the bottom of the pie pan
Pour the filling into the pie tin and bake pie 35 minutes (20 minutes for smaller pies), or until the center is 'set'.
Place on cooling rack and allow cooling 2-3 hours before serving. This is important to allow the pie to 'set' properly.
