Alana talks with Mitch Visser and Chef Len about the importance of using produce that's close to home and the difference it makes in taste.

Panzanella Salad

· 3/4 pound day-old crusty peasant-style bread, cut into 1-inch cubes (about 6 cups)

· 2 large tomatoes or Cherry (about 1 pound), trimmed and each cut into 8 wedges

· 3/4 cup sliced hot house cucumber

· 1/2 cup green onion

· 1/2 cup extra-virgin olive oil

· 3 oz blue cheese

· 4 oz chopped bacon

· 6 tablespoons smoked tomato vinaigrette

· 1 c chopped romaine

preparation:

In a serving bowl stir together the bread, the tomatoes, the cucumber, the onion, the oil, the vinegar, the basil, and salt and pepper to taste until the salad is combined well.
