Ice cream cookie sandwiches
Ingredients: Your choice of cookies, ice cream and toppings
Temper your ice cream for 15 minutes in the fridge. Put out cookies with flat sides up. Take a scoop of ice cream and place between two cookies, then flatten. Roll the edges of ice cream in your toppings and freeze to set the ice cream.
Ice cream pie
Temper a half gallon of ice cream in the fridge for 15-30 minutes. Scoop into a bowl and add as many ingredients as you'd like (cookies, nuts, chocolate) reserving 1/4 c. for the top Mound into the pie crust and garnish with remaining ingredients. Freeze to set the ice cream and serve with chocolate or caramel sauce and whip cream if desired.
