The Produce for Kids fall campaign is Healthy Schools, Healthy Minds and is running in all Meijer stores from September 2-29.
This year the campaign is benefitting, an online charity aimed at helping public school teachers obtain the supplies needed for their classrooms. Funds raised at Meijer will benefit local schools by funding nutrition based projects local teachers have submitted.

Great Produce for Kids Recipes to try:
Breakfast Boost!
Florentine Egg Muffins
Makes 4 servings

1 Tbsp. Meijer unsalted butter
1 cup Highline® mushrooms, sliced
½ cup NatureSweet® vine ripened cherry tomatoes, diced
2 cups Earthbound Farm® organic baby spinach, loosely packed
1 cup red bell peppers, seeded, diced
6 large eggs
1-1/2 cups Green Giant® fresh red potatoes, grated, cooked
½ cup shredded Meijer mozzarella cheese

1. Preheat oven to 400°F.
2. Heat butter in large skillet over medium-high heat; add mushrooms, tomatoes, spinach and peppers. Cook for 5 minutes or until tender and water evaporates. Remove from heat and set aside to cool.
3. Lightly beat eggs in large mixing bowl. Mix in cooked vegetables, potatoes and cheese. Season with salt and pepper.
4. Line large muffin tin with 8 greased foil cups. Portion ½ cup mixture into each cup.
5. Bake in oven for 10-20 minutes or until eggs puff and are firm.

Serve with fresh berries. This meal provides 294 nutrient rich calories.

Easy Lunch or Dinner!

Ham Caprese Panini

Makes 4 servings

4 large rustic whole wheat rolls
1 Tbsp. Meijer unsalted butter
½ lb. Markets of Meijer low sodium deli ham
2 Sunset® Campari® brand cocktail tomatoes, sliced
4 slices Meijer Provolone cheese
½ cup Earthbound Farm® organic baby spinach, loosely packed
8 large fresh basil leaves, thinly sliced

1. Preheat Panini grill to medium-high heat.
2. Cut ¾ way through rolls, creating a hinge. Lightly butter outside of rolls.
3. Assemble sandwich by adding ham, cheese, tomato, spinach and basil.
4. Cook in Panini maker per instructions, until bread is golden brown and cheese is melted. If using grill, place sandwich on grill and lay heavy pan on top to press sandwich down. Cook 3-6 minutes, or until bread is golden brown.
5. Flip over and repeat process until bread is golden brown and cheese is melted on both sides.

Serve with apple slices and Marzetti® caramel dip. This meal provides 393 nutrient rich calories.

Sensible Snack!

Pistachio Apple Bread
Makes 8 servings

2 cups whole wheat flour
2 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
2/3 cup Meijer sugar
1 cup shelled pistachios, chopped
1 cup coconut milk
2 apples, cored, peeled, diced
½ cup Meijer unsweetened applesauce
2-1/2 tsp. vanilla extract

1. Preheat oven to 375°F.
2. Grease and flour 9x5-inch loaf pan or 4 mini loaf pans.
3. Whisk together flour, baking powder, baking soda, salt, sugar and pistachios in large mixing bowl.
4. In separate bowl, whisk together coconut milk, apples, applesauce and vanilla.
5. Make a well in the middle of dry ingredients and pour in wet ingredients. Fold with a spatula until just combined. Do not over mix.
6. Spoon batter into prepared pan(s).
7. Bake in oven for 20-25 minutes for mini-loaf pans or 40-45 minutes for 9x5-inch pan, until a toothpick inserted in the center of the loaf comes out clean.
8. Cool in pan on wire rack for 5 minutes. Remove from pan and cool for 30 min. before slicing.

Serve with a glass of fat free milk. This snack provides 380 nutrient rich calories.
