GRAND RAPIDS (WZZM) - This is the recipe for "The Fall Guy" salad. Chef Cody Clements is the Head Chef at The Electric Cheetah. He made "The Fall Guy" salad on the WZZM 13 Noon show on Friday, October 19, 2012.

"The Fall Guy" salad

2oz Roasted Butternut Squash
2oz Roasted Pumpkin
2oz Roasted Rutabega
2oz Roasted Mushrooms such as Shitake, Oyster, Crimini, Button
1oz Arugula
1oz Red Onion
2T Gorgonzola Cheese
2T Toasted Pumpkin Seeds
1.5oz Pumpkin Sherry Vinaigrette

For Roasting Vegetables: Toss Vegetables in olive oil, season with salt and pepper, and roast separately in a 400 degree oven until fork tender. Once Vegetables are cooled toss in a bowl with remaining ingredients and season with salt and pepper. Garnish with pumpkin seeds and additional cheese if desired.

For Dressing:

1/4c Canned Pumpkin
1T Sherry Vinegar
1/2 olive oil
1T Brown sugar
1t cinnamon
water to thin if needed
salt to taste
