Caprese Bruschetta
Caramelized Onion with Gorgonzola and sage
Goat Cheese, Pear, Arugula, Basil, Toasted Walnuts
Brushcetta, from the Italian "bruscare," which means "to roast over coals," refers to the bread, not the toppings. Rather large slices of bread are grilled, rubbed with garlic, then drizzled with olive oil. They are usually topped with tomatoes and basil, though other toppings from meats to vegetables can be used.

Preparing the bread

ingredients
• 1 loaf ciabatta bread cut in half or French bread cut in slices
• 1/3 cup extra-virgin olive oil

directions
1. Heat a grill or grill pan to medium-high.
2. Drizzle olive oil on bread. In a small bowl, mix the garlic with the EVOO.
3. Grill the bread until grill marks appear.

Tomato Basil Bruschetta

ingredients

• 1 loaf ciabatta bread cut in half
• 1/3 cup extra-virgin olive oil
• 16 -ounces fresh mozzarella cheese
• 2 pints multicolor cherry tomatoes, halved or quartered
• 2 cloves garlic, chopped
• 1 cup basil leaves, shredded
• Salt and black pepper

4. Heat a grill or grill pan to medium-high.
5. Drizzle olive oil on bread. In a small bowl, mix the garlic with the EVOO.
6. Grill the bread until grill marks appear.
7. In a bowl, mix the tomatoes, basil, garlic and more oil, s&p.
8. Spread the grilled bread with the cheese.
9. Top with the tomato mixture

Gorgonzola, Caramelized Onions & Sage

ingredients

• 2 onions
• 2 T olive oil
• 1/3 cup red wine
• 8 oz gorgonzola cheese
• grilled, sliced French bread
• ¼ cup fresh sage

directions

1. Prepare bread like the first recipe
2. Slice an onion into thin slices
3. Heat a saute pan and add olive oil
4. Add sliced onions
5. Cook slowly until brown, 20-25 minutes
6. Add Marsala wine or any red wine and cook until liquid evaporates Add S & P
7. Spread gorgonzola cheese on bread, top with caramelized onions and sage

Goat Cheese, Pear, Arugula, Basil

ingredients

• 2 pears, Sliced
• 8 oz goat cheese
• 1 cup of arugula
• 1 cup basil
• balsamic vinegar

directions

1. Prepare bread like the first recipe
2. Spread goat cheese on bread
3. Top with arugula, basil and pear
4. Drizzle with balsamic vinegar
