Garanish: Dried Apple Chips

Recipe:

1 can coconut milk
2 oz olive oil
8 oz carrot juice
4 pounds roasted tomatoes
3 pounds good vegetable stock
8 oz orange juice
6 oz tomato paste
1 pound apple diced
.5 oz iodized salt
.25 oz cumin
.5 oz curry powder
.5 oz paprika
/25 oz ground ginger
1 oz honey
8 oz diced white onion
8 oz diced carrot
4 oz diced celery
3 oz raw diced garlic

1. Place the olive oil, raw garlic, celery, onion and carrot in a 6 quart soup pot on high heat. Saute the vegetable transucent.
2. Add all the remaining ingredients and whisk well to incorporate.
3. Simmer ingredients for 25 minutes.
4. Remove from heat and Adjust salt content if needed.
5. Blend soup with either a hand help immulsion blender and or allow to cool and run soup through a blender.
6. Mix soup well after blending and reheat to order.

This soup is a great vegan option. It has approximately 90 calories per 8 to 9 oz serving.

Muskegon, Michigan, February 3, 2014 - Catholic Charities West Michigan will hold its popular Soup's On Along the Lakeshore! fundraiser on Thursday, Feb. 27 in Muskegon.

Now in its sixth year, the annual fundraiser offers attendees the opportunity to sample more than 15 types of soups donated by Muskegon-area restaurants. The event benefits God's Kitchen Along the Lakeshore, a CCWM Community Outreach program that provides free meals to families in times of need, and its Loaves & Fishes Food Pantry.

Attendees will be able to select one of hundreds of hand-painted bowls donated by dozens of youth groups, churches, businesses and other Muskegon organizations to take home as a visual reminder that there are those among us who go hungry each day. Soup's On will take place from 6-9 p.m. and again be held at the Event Center at Fricano Place.

"Last year, God's Kitchen Along the Lakeshore served more than 18,000 meals to those in need - but we can't do it alone," said Terry Walsh, president and CEO of Catholic Charities West Michigan. "We rely on the support of the Muskegon community to help us fill plates throughout the year.

"The need in our community is very real - and continues to increase among the most vulnerable. Soup's On Along the Lakeshore! is a mindful way of raising awareness of the food insecurity that exists in our community. Please join us on Feb. 27 to raise funds for our Community Outreach programs."

Soup Servers from the Muskegon Lumberjacks and the Muskegon Police Department, along with other community volunteers, will be on hand to ladle out soup at Fricano Place, 1050 W. Western Ave. Entertainment for the evening will be provided by the Bermuda Triangle.

Sponsors of the event include Panera Bread, Mike and Sue Jandernoa, Gordon Food Service, Exhibit Design Consultants and Creative Design and Marketing.

Last year, more than 350 people gathered for Soup's On Along the Lakeshore!, raising more than $26,000 to benefit God's Kitchen Along the Lakeshore, which provides hot meals to those in need four afternoons each week. Loaves & Fishes Food Pantry provides food to those in need three days a week.

CCWM's Community Outreach programs are almost 100 percent donor funded and rely heavily on charity partners and businesses, grants, in-kind contributions and other type of financial support.
