Check out this healthy snack for dad

If food is part of your Father's Day, check out this healthy snack for day that's easy and delicious.

MUSKEGON, Mich. — Father's Day is this Sunday, meaning there will be plenty of people trying to find the perfect way to celebrate the special men in their lives. 

If food is apart of your celebration, but you want to keep things healthy -- check out this recipe from Blue Cross, Blue Shield Dietitian Grace Derocha joined. Grace joined Kirk at the Muskegon Farmers Market, where they found some of the items for the recipe and whipped it up.

Summer Bean and Corn Salsa

Ingredients for the salsa
1 can (15 oz.) of chickpeas, drained and rinsed, try using low-sodium or no salt
1 can (15 oz.) of black beans, drained and rinsed, try using low-sodium or no salt
1 can (15 oz.) of corn, drained, try using low-sodium or no salt
1/2 an English cucumber, chopped
1/2 container of cherry or grape tomatoes, sliced in half
2 avocados, pitted, peeled and chopped
1 bell pepper, any color, de-seeded and chopped

Ingredients for the dressing
2-3 Tbsp. olive oil
1-2 Tbsp. balsamic vinegar
1/2 lemon, juiced
1/2 lime, juiced
2 tsp. cumin or to taste
1 tsp. salt or to taste
1/2 tsp. garlic powder or to taste
1/2 tsp. pepper or to taste

Instructions

  1. Mix all salad and dressing ingredients in one bowl. 
  2. Place in refrigerator for about 15 minutes, then serve. Enjoy!
