Southern Bell Salad with peaches

With peaches in season, now is a great time to try out this popular fruit with a savory twist to top off your favorite salad!

For today's On the Menu segment, Mercy Health Sous Chef Tommy Fitzgerald demonstrates a simple vinaigrette using peaches.

Southern Bell Salad

1 cup of your favorite vinegar

¼ cup Extra Virgin Olive Oil

1 Tablespoon Italian

Salt and Pepper to taste

3-4 Peaches, Sliced

1 small red onion sliced

1 cup pecans roasted and salted

½ cup Bleu Cheese Crumbled Or Feta Crumbles

1 pound mixed Greens

In a large mixing bowl, add the vinegar, oil, Italian seasoning, salt, and pepper and mix well.

Add peaches and onions to vinaigrette.

When you are ready to serve, place vinaigrette atop greens. Finish with pecans and cheese.

This vinaigrette will last up to 7 days in the refrigerator.
