A quick and easy breakfast for mom

Need a quick Mother's Day breakfast to whip up?

GRAND RAPIDS, Mich. — If you need to whip mom up a quick breakfast, The Ginger Chef gave us the perfect recipe! And the kids can help too!

Brioche Bread Pudding French Toast

Serves: 8

Ingredients:

  • 20 oz Brioche Hamburger Buns (or whatever brioche bread you can find)
  • 1 tsp cinnamon
  • 6 eggs, beaten
  • 3 cups milk
  • 1 tbsp vanilla extract

Directions:

  1. Preheat oven to 325˚F.
  2. In a large bowl, gently tear up brioche buns/bread into 1 inch pieces.
  3. Toss brioche pieces with cinnamon. Set aside.
  4. In a medium bowl, beat eggs until well mixed. Add milk and vanilla and stir well to combine.
  5. Gently toss milk and egg custard with cinnamon brioche pieces until all the milk has absorbed. If it seems a little dry add ¼ cup milk until all the bread is moist.
  6. Spray a 9x13 cake pan with non-stick spray and pour bread pudding pieces into the pan. Distribute evenly.
  7. Bake for 20-25 minutes. Cool.
  8. Cut into pieces and sear in a sauté pan over medium high heat.
  9. Serve with berries or maple syrup. *note: great make ahead dish*
