GRAND RAPIDS, Mich. — With Memorial Day just around the corner, a lot of us are getting ready to host family and friends for a outdoor barbeque, but it doesn't need to be all hamburgers and hotdogs. Registered Dietitian Wendy Brookhouse showed us how to use red, white and blue fruits and veggies to have a patriotic and healthy Memorial Day.
All American Breakfast:
- Whole Wheat waffles or English Muffins
- 2 TBSP peanut butter
- Bananas, & berries
Yogurt Parfait
- Blueberries
- Strawberries
- Granola
Strawberry ‘Boats’
- Strawberries, Bananas & Blueberries
- Attached with toothpicks
Vegetable Flag
- Alternating ‘stripes’
- Cucumbers, Jicama, Red Bell Peppers, Cherry Tomatoes
- Serve with Greek yogurt dip or hummus
- Serve either in a blue bowl
Greek yogurt dip:
- 1 cup Plain Yogurt
- ¾ tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried dill
- ¼ tsp soy sauce
