Recipe from Mark Kingshott of All In One Chef

Raw Corn Salad serves 6

4 ears of corn, leaves and hair removed

1 pint of tomatoes cut in half

1 medium sized cucumber diced

½ red onion diced

2 TB fresh chopped basil

¼ cup of fresh lime juice (2-3 limes)

2 TB Extra Virgin Olive Oil

2 tsp salt


1. In a medium bowl, remove corn from cob using a chef knife working top to bottom.

2. Add Onion, Tomatoes, Cucumber and basil

3. In a small bowl, squeeze limes to get ¼ cup of lime juice. Add salt and mix with wire whisk. Once salt begins to dissolve, keep using the whisk and slowly drizzle in olive oil. Pour vinaigrette over salad, stir with rubber spatula until fully mixed. Chill for 1 hour for flavors to mix, serve.
