Chef Nick from Reds at Thousand Oaks came to the WZZM 13 Studio with a recipe for crème brulee French toast.
Crème brulee batter ingredients:
yield two quarts
- 1 quart heavy cream
- 1 T vanilla bean paste
- 14 egg yolks
- ¾ cup sugar
Crème brulee batter procedure:
- In a large stainless mixing bowl, whisk egg yolks and sugar together until pale yellow in color.
- In a stock pot, scald heavy cream and vanilla paste while whisking often.
- Slowly temper hot cream into egg whisking rapidly.
- Cool in ice bath (2-1 ice and water).
