Chef Nick from Reds at Thousand Oaks came to the WZZM 13 Studio with a recipe for crème brulee French toast.

Crème brulee batter ingredients:

yield two quarts

  • 1 quart heavy cream
  • 1 T vanilla bean paste
  • 14 egg yolks
  • ¾ cup sugar

Crème brulee batter procedure:

  1. In a large stainless mixing bowl, whisk egg yolks and sugar together until pale yellow in color.
  2. In a stock pot, scald heavy cream and vanilla paste while whisking often.
  3. Slowly temper hot cream into egg whisking rapidly.
  4. Cool in ice bath (2-1 ice and water).
