Local contestants on The Great Food Truck Race

They're known as the Brunch Babes. Lara Webster and Lydia VanWormer stopped by to share a recipe.

GRAND RAPIDS, Mich. — Lara Webster and Lydia VanWormer are two members of The Brunch Babes appearing on the Food Network show, "The Great Food Truck Race."  

Lara and Lydia are among nine teams competing for for a $50,000 grand prize. The Great Food Truck Race kicked off Sunday in Myrtle Beach. It now hits Hilton Head, Daytona Beach, Tampa, Fort Myers, Fort Lauderdale and Miami, culminating in a Key West finale on Sunday, July 28 at 9 p.m.

The Brunch Babes joined My West Michigan to share a bacon onion jam recipe, sure to wow you're next brunch endeavor.

Brunch Babes Bacon Onion Jam

INGREDIENTS
3/4 lb bacon
2-3 large sweet onions, thinly sliced
1/2 cup brown sugar
1/4 cup strong brewed coffee
2 Tbls balsamic vinegar
2 Tbls cola *optional
Fresh herbs such as thyme or sage *optional

DIRECTIONS

  1. Dice bacon into roughly half inch pieces. Add to large frying pan over medium-high heat. Don't worry about separating all the pieces before adding, they will come apart while cooking. Cook for about 10 minutes, stirring frequently until the bacon is cooked but not crispy. 
  2. Using a slotted spoon, remove bacon pieces and set aside. Remove all but 2 tbls of bacon grease from pan. 
  3. Add onions to the pan and cook for roughly 10 minutes and then reduce the heat to low. Add the sugar and optional cola and cook for another 20 minutes or so until the onions have caramelized. Add the coffee, balsamic, 1/4 c water and reserved bacon and increase the heat to medium. Continue to cook stirring about every 5 minutes until jam-like consistency.
  4. Remove from heat and taste for seasoning. Add salt and pepper as desired. 

Note: Lasts up to a week in refrigerator.
